Beyond Home Economics 101:
Putting Science into Nutrition
What's wrong with the establishment's approach to nutrition? Why does it lead to obesity and degenerative disease? By sorting foods by nutrient/Calorie instead of nutrient/weight, Dr. Harris will use data from Nutritionist IV and numerous graphics to show how the system can be fixed. He'll also discuss how the vegetarian grain based diets have set the stage for Atkins, Sears, and the low carb craze.
William Harris, M.D. received his medical degree from the University of California at San Francisco. After stints in San Diego, Los Angeles, and as a voluntary physician in Vietnam, he settled in Honolulu in the Emergency Department of Kaiser Permanente. A vegan for over 40 years, Dr. Harris is a founding director of the Vegetarian Society of Hawaii and has served in a variety of functions including six years as the newsletter editor. He's currently the coordinator/producer of the weekly TV series "Vegetarian," broadcast on Thursdays at 6 p.m. on Oceanic Cable Channel 52. Dr. Harris is the author of The Scientific Basis of Vegetarianism.

George Eisman has taught nutrition at the college and university level since 1980 and created the nation's first credit program in Vegetarian Studies. He is a Registered Dietitian and has lectured at national and international nutrition conferences. He has written articles for the Journal of Nutrition Education and Vegetarian Times and now teaches the VEGEDINE Home-Study Course in Vegetarian and Vegan Nutrition. He is the author of that course's text, entitled A Basic Course in Vegetarian and Vegan Nutrition and also the popular book on ethical eating called The Most Noble Diet.

John Westerdahl, PhD, MPH, RD, CNS is a nutritionist, registered dietitian, certified nutrition specialist and master herbalist. He is the Director of Wellness & Lifestyle Medicine for Castle Medical Center in Kailua, the Nutrition Editor for Veggie Life magazine, co-host of the weekly popular radio talk show, Nutrition and You on KWAI 1080 AM radio, and hosts Dr. John's Health Moment on Oceanic Cable 16's Tasty & Meatless.
Dr. Westerdahl is a former Senior Nutritionist for one of the leading international nutritional and herbal supplement companies and his research has led to the formulation of several state of the art nutritional and herbal supplements. He is an American Dietetic Association panel member of leading scientific experts on dietary supplements.
Dr. Westerdahl serves on the faculty of the American Academy of Nutrition and is a member of numerous scientific and professional societies including the American Dietetic Association and the American College of Nutrition. He is listed in Who's Who in America and Who's Who in Medicine and Healthcare. He is the author of Medicinal Herbs - A Vital Reference Guide and co-author of The Millennium Cookbook: Extraordinary Vegetarian Cuisine.

Mary is a long time VSH member and serves on the board of directors as recording secretary. She is a nutrition counselor at the Wellness Center and she'd like to show you how to put together a meal plan that will include all the nutrients you need for optimal health. Raul is a retired teacher and principal but is a "rehired" chef. Born in Mexico, he first learned to cook while watching his mother, and he excels in Mexican cuisine. He is a certified dietary manager and a wellness cuisine instructor at Castle. Raul will demonstrate how fun and easy vegetarian cooking can be.

"The Psychology of the Dinner Plate: Vegetarianism versus Carnism"
Who are the vegetarians? Do they espouse certain values, ideologies, politics? How do vegetarians and meat-eaters (carnists) differ on issues like violence, empathy, and connectedness to the world? Being a vegetarian is more than avoiding meat-based foods. It is a way of living in and looking at the world that can involve a change in consciousness, self-concept, and personal relations. In this talk, Dr. Shapiro will present findings from the emerging literature in the social sciences on the psychology of vegetarianism and, as well, of carnism.
Both an advocate and an academic, Kenneth Shapiro is the executive director of Society and Animals Forum, formerly Psychologists for the Ethical Treatment of Animals; editor of Society and Animals: Journal of Human-Animal Studies; and coeditor of the Journal of Applied Animal Welfare Science. Shapiro earned his BA from Harvard University and his PhD in clinical psychology from Duke University. His most recent book is Animal Models of Human Psychology: Critique of Science, Ethics and Policy.

Mr. Park Jae Oh is a well known lawyer and TV personality in Korea. He is a leader of the Korean Vegetarian Association and a consultant to the new young vegetarian food industry in Korea. He will present a new video showing the current state of the vegetarian movement in Korea, including restaurants and food factories. Ten kinds of vegan food manufactured in Korea will be prepared for sampling by the audience after the talk.
Mr. Chung Chong Ha will also be coming to Hawaii for this event. He has been a vegan for more than 20 years. He opened the first vegan restaurants in Korea, and is currently a vegan restaurant manager. The lecture will be delivered in English, but a translator will be available, especially during the question and answer period, and afterwards to talk with guests.
